Course Overview

As a Chef de Partie apprentice, you will be learning how to be responsible and in charge of a particular area of production in a restaurant.

You will be entering an industry which works across an array of sectors including hospitality, care and aviation to name a few examples. As a Chef de Partie you have the opportunity to work in different settings and for different organisations including restaurants, hotels, care homes, hospitals, cruise ships and various other establishments.

As a Chef de Partie your main roles and responsibilities are varied and include-

  • Preparing, cooking and finishing complex dishes whilst also overseeing a section of the kitchen. The section you are responsible for can include the pastry, larder, butchery, fish, sauce or vegetable section.

  • Overseeing and supervising team members with receiving, storing, preparing, cooking and finishing a range of food items to support the overall functioning of the kitchen.

  • Contributing and helping the sous chef and head chef to review and create new dishes and menus for customers, to encourage positive trading.

  • Ensuring that both you and members of your team are maintaining high standards of personal and food hygiene at all times and reinforcing this in practice.

  • Overseeing deliveries and safe storage of all deliveries.

  • Overseeing and monitoring the quality and safety of food, whilst also promoting and maximizing quality to minimise overall food waste.

Within your role you will be delivering high quality customer experience, which in turn will support a businesses revenue and profit margins.

Good communication and interpersonal skills are of upmost importance in this industry as you will be interacting with a team of chefs as well as the wider overall team in a restaurant including front of house staff, suppliers and customers.

Depending on the size of the organisation you work for the role can vary. For example, working in a smaller establishment you may be accountable for producing cooking and finishing food items required for each service of a particular section.

As an apprentice you need to be employed for at least 30 hours a week and you will attend college one day a week.

Assessment

This apprenticeship is assessed through an End Point Assessment (EPA). This is comprised of three parts:

  • Observation with Questions- This involves an independent assessor observing you undertaking work as part of your duties in the workplace and asking you questions in line with the standard. This will take place over 3.5 hours.

  • Professional Discussion- This involves a two-way discussion, lasting 90 minutes, involving both you and an independent assessor actively listening and participating in a conversation about your role. The independent assessor will pick a minimum of 4 preparation, cooking and finishing techniques to discuss during the professional discussion. This allows the assessor to look and assess your competency in line with the knowledge, skills and behaviours in the standard.

  • Knowledge test-This involves a closed book exam, taking place over 75 minutes, consisting of 50 questions.

Whilst on programme you will also be building up a portfolio of evidence to support you at End Point Assessment with your Professional Discussion.

Progression Routes

Upon completion of this Apprenticeship you may progress onto degree-level study or further full time work. A Level 3 Chef de Partie Apprenticeship could lead onto progression in a senior culinary chef role.

5 GCSEs at Grade 4/C or above including English and Maths or Functional Skills Level 2

Or the ability to demonstrate skill to this level through initial assessments.
