Delivered at a 75:25 practical to theory ratio, this Level 1 offers a practical cookery experience to develop your skills in an industry-standard kitchen. You’ll be given an introduction into kitchen equipment, as well as preparing and cooking food using basic methods such as; baking, stewing, braising, roasting, grilling, boiling, poaching, steaming, deep and shallow frying.
Assessed through short-answer question papers and timed practical assessments, you will gain a Level 1 City & Guilds certificate in Culinary Skills upon successful completion of the course.
This course involves both practical and theory classes, with corresponding assessments. Classes will take place one day a week at College for ten weeks.
On this course we will be covering several methods of cookery, including:
Boiling
Poaching
Steaming
Baking
Deep & Shallow Frying
Practical classes will focus on the methods of cookery, knife skills and Health & Safety practices within a commercial kitchen. The theory lessons will support the information covered within practical classes and cover the essential underpinning knowledge preparing learners for the required assignment work.
Practical assessments will take place in a relaxed, kitchen environment where students will re-produce dishes that have been demonstrated by the tutor, while theory assessments will be delivered via short answer question papers working collaboratively with the class.

There are no formal entry requirements for this course, however, you must show a commitment to study (attendance, punctuality & behaviour).
This course costs £179.00, including exam fees.
You may be eligible for free study if you are 23 or under and this is your first full Level 2 or 3 course. Alternatively, if you are unemployed, receiving an eligible benefit, and taking the course to help you find employment.
