As a Production Chef Level 2 Apprentice you will learn the foundations and the importance of working as part of a team in a kitchen environment.

As a Production Chef you will have the opportunity to work in a variety of environments where timing is a priority such as schools, hospitals, the Armed Forces, care homes as well as high street casual dining and pub kitchens.

You will report to the Senior Production Chef or your line manager.

Within your day to day job role you will-
• Work using standardised recipes and menus, producing food in large quantities to meet customers demand.
• Maintain excellent standards of personal, food and kitchen hygiene
• Ensure you are complying to procedures, menu specifications and recipes
• Produce food which meets portion controls and budgetary constraints
• Adapt and produce dishes to meet individual special dietary, religious and allergy requirements
• Follow, complete and maintain production schedules, legislative and quality standard documentation
• Use the specialist kitchen equipment
• Communicate both internally and externally with both customers and colleagues
• Commit to carrying out personal development activities to develop your skills within the industry.

On completion of this course you will receive a nationally recognised Apprenticeship Standard qualification as a Level 2 Production Chef.

As an apprentice you need to be employed for at least 30 hours a week.

Course Overview

This apprenticeship is assessed by End Point Assessment (EPA) at the end of the course duration. The End Point Assessment is made up of three elements which will be assessed by an Independent Assessor.

  • On Demand Test- This is a 60 minute exam where you are assessed through 30 multiple choice questions in line with the standard.

  • Practical Observation- This is a 120-minute practical observation, where the independent assessor will observe you in the workplace. This will be followed by a question and answer session.

  • Professional Discussion- This is a 40-minute structured discussion between you and the Independent Assessor. You will be answering questions based on the criteria in the apprenticeship standard.

Whilst on programme you will be covering the following knowledge and skills;

  • Kitchen operations - techniques, brand specifications, safe handling, procedures

  • Nutrition - key nutrient groups, adapting dishes, specific dietary religious and allergenic needs

  • Legal & Governance - legal requirements, health and safety, completion of legal documentation

  • People - communication, customer service, supporting team members

  • Business - vision, values, objectives and reputation, financial impact, sustainability

  • Commercial & Personal Development - identify personal goals, development opportunities, different learning styles.

Progression Routes

Upon completion of this Apprenticeship, you may decide to go onto the Senior Production Chef Level 3 Apprenticeship or alternatively continue onto full time work within the industry. Many apprentices are offered a permanent role within their company once they have completed their qualification.

  • Work well individually and as part of a team

4 GCSES at Grade 3/D or higher including English and Maths or Functional Skills Level 1.

Or the ability to demonstrate ability to this level through initial assessments.
