This Level 2 course in Professional Cookery is designed to build on a broad range of cookery skills and food services, to prepare you for a career in the hospitality industry. The practical classes will include food preparation and food service. The theory lessons will cover the essential knowledge and will complement the required assignment work.

This course includes a 30-hour work placement in industry, and weekly experience of preparing dishes in our on-site Coulson’s restaurant. You will also prepare food and service for external events and cooking demonstrations in the community.

Course Overview

Whilst on the course, you will be supported to demonstrate your knowledge, understanding and learnt skills in the following units:

  • Health and Safety

  • Food Hygiene

  • Healthy Eating

  • Kitchen Operations

  • Costs and Menu Planning

  • Soups, sauces & stocks

  • Meat & poultry dishes

  • Fish & shellfish dishes

  • Bread & pastry products

This course is continuously assessed using a range of methods including assignments and practical performance.

Industry Links

Hospitality & Catering at LMC work closely with the Eggcup foodbank to prepare dishes for the local community. Guest speakers are invited into College throughout the academic year and the course is developed with good links to local employers for work placements, Apprenticeship progression, or full-time employment.

Progression Routes

This course can lead onto other courses and Apprenticeships with Lancaster & Morecambe College, including:

  • Chef de Partie Apprenticeship Level 3

  • Commis Chef Apprenticeship Level 2

  • Hospitality Supervision Apprenticeship Level 3

  • Production Chef Apprenticeship Level 2

In addition, the course could lead to full-time employment in the industry.

Entry Requirements

To study this course, you must have 3 GCSEs at grade D/3 or higher OR a Level 1 related qualification PLUS English or Maths at grade 3/D or higher.

Students on the course will need to purchase a uniform for kitchen and restaurant, knives and text books, support for course expenses may be available from the Student Money Team.
