This Level 3 course in Professional Cookery will develop your cooking skills to a higher level, covering complex dishes in your place of work in an industry standard professional kitchen.
An experienced advisor from College will visit you at your place of work, at least once a month where you will work your way though a wide range of units. Your advisor will observe you preparing and finishing dishes.
You will be assessed at the end of each module approximately every two to three weeks. Practical, oral and written assessments are the key components of this course, together with comprehensive portfolio building.
During the course you will develop advanced skills and techniques for producing the following to recipe specifications:
Meat, poultry and game dishes
Fish and shellfish dishes
Vegetable and vegetarian dishes
Dough and batter products
Hot, cold and frozen desserts
Biscuits, cakes and sponges
Paste and patisserie products
There are a variety of progression opportunities within the College, including;
Level 2 Production Chef Apprenticeship
Level 2 Commis Chef Apprenticeship
Level 2 City & Guilds certificate in Patisserie & Confectionery Skills
Promotions are always possible within hotel and catering industry. The course would be useful for practising chefs wanting to gain new ideas and share the experience of others. The nature of the course allows you to gain new skills and experience different styles using them in the workplace.

You’re over 19 and do not already have a full Level 3 qualification or higher
You have not already been funded for a course using Free Courses for Jobs offer, except for 1 short course via the offer. If you don’t meet the eligibility criteria for the offer, all courses are available to be funded via the Advanced Learner Loan.
You have a full Level 3 qualification, and you earn below the annual National Living Wage
You have a full Level 3 qualification, you’re unemployed and in receipt of benefits
