As a Senior Production Chef apprentice, you have more responsibility in the food industry. You will be responsible for managing a production chef team in order to provide and produce standardised dishes and menus to meet customer need and demand. You may be leading a team or be supporting the head chef in a larger establishment.
As a Senior Production Chef, your general responsibilities will include-
Being accountable for the day to day running of the kitchen service, producing, monitoring and maintaining consistent food standards, legislative requirements and quality across all areas and during all the stages of production and supply.
Supervising and contributing to the production of standardised recipes and menus
Supervising the production of dishes to meet specific dietary needs and requirements
Completing, monitoring and maintaining food safety management systems including the delivery, storage, cooking and service and work equipment
Identifying training needs and assisting in the recruitment of kitchen personnel and team members
Helping maintain the catering operating budget using the workplace nominated suppliers and ensure good waste control.
Supporting cost reduction, improve performance, revenue, profit margins and customers experience at all times through your work
Monitoring service to improve efficiency and productivity
Leading the team briefings and meetings
On completion of this course you will receive a nationally recognised Apprenticeship Standard qualification as a Level 3 Senior Production Chef.
As an apprentice you need to be employed for at least 30 hours a week.
This apprenticeship is assessed by End Point Assessment (EPA) at the end of the course duration. The End Point Assessment is made up of three elements which will be assessed by an Independent Assessor.
On Demand Test- This is a 90 minute exam where you assessed by 45 multiple choice questions in line with the standard.
Practical Observation- This is a 4 hour practical observation, where the independent assessor will observe you in the workplace. This observation must cover both preparation and service.
Professional Discussion- This is a 60-minute structured discussion between you and the Independent Assessor. You will be answering questions based on the criteria in the apprenticeship standard.
Upon completion of the course you can progress onto full time work with opportunities available in employment as a Head Chef, Second Chef, Kitchen Manager/ Supervisor or Cook.

5 GCSEs in English and Maths grade 4/C or above or Functional Skills Level 2.
Or the ability to demonstrate ability to this level through initial assessments.
